Arroz Amarillo (Yellow Rice)
- Olive Oil – 2 Tbsp
- Rice – 1 cup
- Water – 3 cups
- Yellow onion, finely chopped – 1/2
- Green pepper, finely chopped – 1/4
- Tomatoes, finely chopped – 1 1/2
- Chicken Bouillon Cubes – 1 packet or more (as you like)
- Parsley – Optional
Directions:
- Bring 3 cups water to a boil
- Turn off heat and let stand
- Heat oil in a medium saucepan over medium heat
- Add onions and peppers
- Cook 5 to 8 minutes or until soft and translucent
- Mix tomatoes, chicken broth, and seasoning and cook until hot
- Pour the rice into the pot and stir
- Cook the rice for 1 minute
- Pour hot water and stir
- Bring rice mixture to a boil.
- Reduce heat to medium low, cover, and simmer for 25 minutes or until rice is tender and water is completely absorbed
- Fluff rice with a fork
- Cover, let stand for 5 minutes before serving
- Top with parsley if desired
