Lime Black Bean Salad

Ingredients:

  • 1 can (15 oz) black beans – drained & rinsed
    • Alternative – 3/4 cup dry black beans – soaked, cooked, & drained (1 1/2 cups cooked)
  • 1 sm green pepper – cut into bite size strips
  • 1 sm red pepper – cut into bite size strips
  • 1 sm yellow pepper – cut into bite size strips
  • 1 carrot – shredded
  • 1/4 red onion – finely chopped

Dressing:

  • 2 Tbsp extra virgin olive oil (EVOO)
  • 1/4 tsp lime peel
  • 2 Tbsp lime juice
  • 1/8 tsp ground red pepper
  • 1/8 tsp ground cumin
  • 1/2 tsp garlic powder

Directions:

  • Combine beans, peppers, carrots and onion in large bowl for salad
  • Combine EVOO, lime peel and juice, cumin, red pepper, and garlic in jar for dressing
  • Cover jar and shake well
  • Pour dressing over vegetables
  • Toss
  • Cover & chill for 1+ hours
  • Stir and serve

Makes 4 servings, at 134 calories and 7.8 grams fat each.

Note: As a side dish to a potluck, a double-batch seems to serve a group of 12.
