Lime Black Bean Salad
Ingredients:
- 1 can (15 oz) black beans – drained & rinsed
- Alternative – 3/4 cup dry black beans – soaked, cooked, & drained (1 1/2 cups cooked)
- 1 sm green pepper – cut into bite size strips
- 1 sm red pepper – cut into bite size strips
- 1 sm yellow pepper – cut into bite size strips
- 1 carrot – shredded
- 1/4 red onion – finely chopped
Dressing:
- 2 Tbsp extra virgin olive oil (EVOO)
- 1/4 tsp lime peel
- 2 Tbsp lime juice
- 1/8 tsp ground red pepper
- 1/8 tsp ground cumin
- 1/2 tsp garlic powder
Directions:
- Combine beans, peppers, carrots and onion in large bowl for salad
- Combine EVOO, lime peel and juice, cumin, red pepper, and garlic in jar for dressing
- Cover jar and shake well
- Pour dressing over vegetables
- Toss
- Cover & chill for 1+ hours
- Stir and serve
Makes 4 servings, at 134 calories and 7.8 grams fat each.
