Zucchini Lasagna

Ingredients:
- 1 lb zucchini – sliced lengthwise
- 2/3 cup fresh mushrooms – sliced
- 2 cups marinara sauce
- 1 1/2 cups low-fat cottage cheese
- 1/2 cup part-skim Mozzarella cheese – shredded
- 1/4 cup Parmesan cheese – freshly grated
Directions:
- Arrange half of zucchini in 9″ x 12″ baking dish – covering the bottom
- Add layer of sliced mushrooms
- Spoon some marinara sauce on top
- Spread cottage cheese over sauce
- Sprinkle with half Mozzarella & Parmesan cheese
- Add layer of remaining zucchini
- Pour rest of marinara sauce over the top
- Sprinkle with remaining Mozzarella & Parmesan cheese
- Loosely cover with foil
- Bake at 350 F for 45-50 minutes (remove foils for remaining 10 minutes)
Makes 6 servings
