Zucchini Lasagna

Ingredients:

  • 1 lb zucchini – sliced lengthwise
  • 2/3 cup fresh mushrooms – sliced
  • 2 cups marinara sauce
  • 1 1/2 cups low-fat cottage cheese
  • 1/2 cup part-skim Mozzarella cheese – shredded
  • 1/4 cup Parmesan cheese – freshly grated

Directions:

  1. Arrange half of zucchini in 9″ x 12″ baking dish – covering the bottom
  2. Add layer of sliced mushrooms
  3. Spoon some marinara sauce on top
  4. Spread cottage cheese over sauce
  5. Sprinkle with half Mozzarella & Parmesan cheese
  6. Add layer of remaining zucchini
  7. Pour rest of marinara sauce over the top
  8. Sprinkle with remaining Mozzarella & Parmesan cheese
  9. Loosely cover with foil
  10. Bake at 350 F for 45-50 minutes (remove foils for remaining 10 minutes)

Makes 6 servings
