Bake Tiliapia
Ingredients:
- 1/4 c. celery
- 1/4 c. onion, chopped
- 1/4 c. sweet red pepper, chopped
- 3 tbsp. butter
- 3 tbsp. flour
- Salt and pepper to taste
- 1/2 tsp. dried tarragon
- 1/2 tsp. dried basil
- 1 1/4 c. milk
- 1 c. Mozzarella cheese, shredded
- 1 1/2 lbs. tilapia fillets
Directions:
- Saute the celery, onions & sweet red pepper in butter until tender in a medium skillet
- Add the salt, pepper, tarragon, basil, flour & milk; mix well
- Cook for 1 minute, stirring constantly until thickened
- Add the cheese & stir until melted — do not boil
- Rinse the tilapia fillets in cold water & drain thoroughly
- Place the fish in a 12 x 8 x 2 inch baking dish & spoon the sauce evenly over the fish
- Bake at 425°F. for 8 to 10 minutes, or until the fish flakes evenly when tested with a fork
Serves 4.
