Healthy Cookies
- 3 large ripe bananas - well mashed
- 1 teaspoon vanilla
- 1/4 cup coconut oil (or olive oil), barely warm – so it isn’t solid
- 2 cups rolled oats
- 2/3 cup almond butter (crush almonds in blender to form a paste)
- 1/3 cup coconut, finely shredded & unsweetened
- 1/2 teaspoon cinnamon
- 1/2 teaspoon fine grain sea salt
- 1 teaspoon baking powder
- 1 cup carob or chocolate chips
Directions:
- Preheat oven to 350 degrees
- Combine bananas, vanilla, and coconut oil in large bowl
- Set aside
- Whisk oats, almond butter, coconut, cinnamon, salt, and baking powder in another bowl
- Add dry ingredients to wet ingredients
- Stir ingredients until combined (dough is looser than a standard cookie dough)
- Fold in the carob or chocolate chunks/chips
- Drop dough (2 teaspoons sized) on a parchment lined baking sheet (melon baller works great)
- Bake for 8 – 14 minutes, slightly browning the bottoms (gas oven with high altitude = 8 min)
- Makes about 3 dozen bite size cookies
