Healthy Cookies

Ingredients:

  • 3 large ripe bananas -  well mashed
  • 1 teaspoon vanilla
  • 1/4 cup coconut oil (or olive oil), barely warm – so it isn’t solid
  • 2 cups rolled oats
  • 2/3 cup almond butter (crush almonds in blender to form a paste)
  • 1/3 cup coconut, finely shredded & unsweetened
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon fine grain sea salt
  • 1 teaspoon baking powder
  • 1 cup carob or chocolate chips

Directions:

  1. Preheat oven to 350 degrees
  2. Combine bananas, vanilla, and coconut oil in large bowl
  3. Set aside
  4. Whisk oats, almond butter, coconut, cinnamon, salt, and baking powder in another bowl
  5. Add dry ingredients to  wet ingredients
  6. Stir ingredients until combined  (dough is looser than a standard cookie dough)
  7. Fold in the carob or chocolate chunks/chips
  8. Drop dough (2 teaspoons sized) on a parchment  lined baking sheet (melon baller works great)
  9. Bake for 8 – 14 minutes, slightly browning the bottoms  (gas oven with high altitude = 8 min)
  10. Makes about 3 dozen bite size cookies
