Zucchini Crust Pizza
Ingredients:
- 4 cups grated zucchini
- 2 cups grated mozzarella cheese, divided
- 2 eggs, slightly beaten
- 1 teaspoon of extra virgin olive oil (EVOO)
- 1 clove garlic, minced (or 3 more)
- 1 medium onion, chopped (red onion works great)
- 1 (14 oz) jar of pizza sauce (without sugar)
- 1 cup mushrooms, sliced
- 1/2 cup chopped green pepper (red and yellow add color)
- 1/3 cup grated Parmesan cheese
Directions:
- Drain and squeeze moisture from zucchini
- Mix with 1 cup grated mozzarella & eggs
- Press in olive oiled pizza pan or 10 x 15 cookie sheet
- Bake at 400 F for 12 min (or until lightly brown)
- Saute garlic and onion in EVOO until limp
- Stir in pizza sauce (try Ragu Pizza)
- Remove pan from oven & spoon mixture over zucchini crust
- Sprinkle with mushrooms & green peppers (add additional toppings if desired)
- Top with Parmesan cheese and remaining 1 cup grated Mozzarella cheese
- Bake at 400 F for 30 min (or until cheese is brown)
Makes 6 servings, 248 calories & 7.6 grams of fat each.
