Zucchini Bread
- 2 cups sugar
- 1 cup vegetable oil
- 1 Tbs vanilla
- 3 eggs-beaten
- 2 cups flour
- 2 tsp baking soda
- 1 Tbs cinnamon
- 1 tsp salt
- 1/4 tsp baking powder
- 2 cups zucchini-grated
- 1 cup walnuts-chopped
- 1/2 cup walnuts-whole (optional)
- 1/2 cup dark chocolate-chopped (optional)
Directions:
- Cream sugar, oil, & vanilla
- Add eggs – mix well
- Add flour baking soda, cinnamon, salt, & baking powder – mix well
- Add zucchini & nuts – mix well
- Pour into 2 greased bread pans
- Bake at 350 F for 50-60 minutes
- Remove from oven to cool
- Sprinkle warm bread with walnut-whole & dark chocolate pieces
Note: I made this bread on Mother’s Day. The recipe is from Linda, who submitted it in memory of her mother, Louise. Growing up, I remember seeing their entire family at church every Sunday.
