Zucchini Bread

Ingredients:

  • 2 cups sugar
  • 1 cup vegetable oil
  • 1 Tbs vanilla
  • 3 eggs-beaten
  • 2 cups flour
  • 2 tsp baking soda
  • 1 Tbs cinnamon
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 2 cups zucchini-grated
  • 1 cup walnuts-chopped
  • 1/2 cup walnuts-whole (optional)
  • 1/2 cup dark chocolate-chopped (optional)

Directions:

  1. Cream sugar, oil, & vanilla
  2. Add eggs – mix well
  3. Add flour baking soda, cinnamon, salt, & baking powder – mix well
  4. Add zucchini & nuts – mix well
  5. Pour into 2 greased bread pans
  6. Bake at 350 F for 50-60 minutes
  7. Remove from oven to cool
  8. Sprinkle warm bread with walnut-whole & dark chocolate pieces

Note:  I made this bread on Mother’s Day. The recipe is from Linda, who submitted it in memory of her mother, Louise.  Growing up, I remember seeing their entire family at church every Sunday.
