Whole Wheat Coconut Oil Banana Bread

Ingredients:

  • 1 cup sugar (or to taste)
  • 1/3 cup virgin coconut oil
  • 2 eggs
  • 2 cups mashed bananas (5-6 medium)
  • 1/3 cup water
  • 1 2/3 cups soft whole wheat flour
  • 1 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup chopped nuts (such as walnuts or pecans)
  • 1 cup shredded coconut
  • 1 1/2 cups chocolate chips (optional)

Directions:

  1. Heat oven to 350 F degrees
  2. Grease the bottoms only of two small loaf pan, line with parchment paper & set aside
  3. Mix sugar and coconut oil until blended
  4. Add in the eggs, one at a time, blending well after each one
  5. Add the bananas & water, mix well
  6. Add in rest of the ingredients (except nuts and coconut) until moist
  7. Stir in nuts, coconut, & chocolate chips
  8. Pour into the loaf pans
  9. Bake until toothpick inserted in the middle of loaf comes out clean — about one hour.
  10. Let cool for five minutes
  11. Remove from pans to wire rack & cool completely before slicing
